Our April 21st Boxes featured a special spring treat - Kale Blossoms.
Kale overwinters and in the spring, produces these delicious flowers. They are only available briefly. Unlike lettuce flowers (which are quite bitter), Kale is a close relative of broccoli and cauliflower, so its 'blossoms' have a similar lightness and delicacy.
If you're not sure how to use your Kale Blossoms, not to fret! You are not alone - Susan and Anne, FarmHub customers, were also faced with a new piece of produce and not sure what to do. They found this delicious recipe we are happy to share with everyone!
This recipe for flowering Kale buds with olive oil and garlic is by Rebecca Cutter. Susan and Anne assure us it is delicious. If you give it a try, let us know what you thought!
