Nettles (Preparation and Soups)

Updated: Feb 7, 2023

Stinging Nettles are a native plant that briefly comes into season in the spring here on the South Island.

You have to be a bit careful (wear gloves) when working with it before cooking, but it is delicious in soups and stews. We wanted to highlight a couple of resources on Nettle preparation for you.

Jared Qwustenuxun Williams created a fantastic video sharing how to steam or preserve nettles:

FarmHub Volunteer Cyndy also tried making a Nettle Soup! She shared pictures of the process:

She used the recipe available in Carolyn Herriot's book, A Year on the Garden Path

However, you can find Nettle soup recipes on the internet too! This one, from the BBC Good Food team, incorporates lots of spring vegetables you may be growing in you garden, getting from the FarmHub, or both!
